SOIL AND VINEYARDS

Soil and vineyard make up a whole. The action of man on the vineyard, the climate, the environment, the vine and the soil form the terroir. We observe the plants and the earth: we taste grapes, we carry out natural treatments to provide what our soil lacks, we can intelligently, we re-branch, we make thinnings and we let the vines tell us their needs. We tread vineyard, we live our vineyard and it shows. Viticulture with our stony soils and without drip irrigation becomes more complex, more demanding. The wines are made in the vineyard, and that is clear in VALTRAVIESO.

HISTORY

We need to go back no less than 2000 years to find the region’s first wine reference: A 66 square metre Roman mosaic, considered the largest piece with Bacchic allegories on the Iberian Peninsula. It was discovered in Baños de Valdearados during the grape harvest of 1972.
As we know it today, the designation of origin arose in 1980 at the initiative of several wine producers and cellar owners who had a zeal for promoting the Ribera del Duero’s quality vineyards and wines. Since then, the start-up of new cultivation methods, the introduction of the most cutting-edge technologies for wine production and the strict process controls applied by the Regulatory Board have made Ribera del Duero synonymous with quality.

SOUL

WYNERY

VALTRAVIESO has 4500 m2 of built facilities, designed to produce a product with the maximum quality possible. A simple straight lined building, which is perfectly integrated into the surrounding countryside and created to constantly facilitate winery tasks. Production and barrel buildings, offices and a tasting room, a social area and bottle and bottling building comprise the modules of this elegant architectural gem that, along with the gardens and courtyards, have a total area of 9000 m2. All the facilities were designed to attain top quality and a unique style.

PRODUCTION

The VALTRAVIESO production building has 32 stainless steel tanks holding between 10 and 20 thousand litres, with a double cooling jacket to control the fermentation temperature at all times. At VALTRAVIESO, we have a total production capacity of 560,000 litres. We produce each vineyard terrain separately to extract the maximum potential from the grape. We use the techniques that yield the best results, such as délestage, or rack and return. Pumping and pigeage (punching the cap) are done in accordance with the needs of each wine and at the decision of the oenologist. This is always done in order to obtain the best wines for each of our varieties.

AGEING

At VALTRAVIESO, we use one, two and three year old French oak barrels to age our wines, with wood coming from the Allier, Nevers and La Jupille forests. We have a total capacity of 960 m2 in which to store up to 2500 barrels, distributed over three levels, which makes it easier to carry out transfers and work while the wine is ageing. Our barrel building is air conditioned to maintain a constant temperature and relative humidity throughout the year, which ensures the proper development of all our wines. Avanzamos en coche por una carretera enfangada y mi sensación fue la misma que el primer día que fui al Bulli: la sensación de no llegar nunca, de que uno se ha equivocado de camino, pues la carretera parece no tener fin. Pero lo bueno se hace esperar y al fin se dibuja la bodega de Valtravieso…
